Easy breezy breakfast - Kanda Poha

As part of the Indian Breakfast Series, here's another favourite of mine - Poha. A simple Mahrastrian breakfast, which has simple made its place in homes across the country and I'm sure across the oceans too. But now as much as I love it, I think its' in need of a revamp. So please share your suggestions for adding some spunk in our age old "poha".  


Kanda Poha Recipe
Preparation Time: 10 mins, Cooking Time: 15 mins

Ingredients:
2 cups poha (flaked rice)
1 medium onion - chopped
1 boiled potato - cubed
1 1/2 tsp green chilly paste or 2-3 green chillies chopped (more or less)
½ tsp turmeric powder
½ tsp mustard seeds
4-5 curry leaves
2 tbsp oil
salt to taste
½ tsp sugar
1 tsp lemon juice
1 tsp red chilli powder
1 tsp coriander powder (optional)
1/2 tsp chat masala powder (optional)
1 tbsp chopped coriander for garnishing
 
Method:
Wash poha and drain water completely and leave aside for 5 minutes. Be gentle while washing, so that the flakes don't break
Mix the boiled potatoes in green chilly paste. Toss and set aside.
Heat oil in a pan. Add mustard seeds and curry leaves. Let mustard seeds crackle. (If using chopped green chillies, add at this stage).
Add chopped onion and saute for 4-5 mins till onion turns pink. Then add potato cubes, turmeric powder, red chilli powder, coriander powder, salt and sugar. Fry for 2-3 mins.
Then add poha and mix well, last add lemon juice.
Garnish with coriander leaves, and sprinkle some chat masala. Serve hot with Haldiram's "Bhujiya" or tomato kethup. (As you like it)


Note:If using raw potato than boiled, slice it medium-thin and fry crisp. It will add crunch to your poha. Can also add 1 small chopped tomato, for added tangyness. Reduce sugar in that case.I also like to add fried peanuts for my bit of crunch. So yes...As you like it.
